Come cool down in our cellar this summer at this popular event. Kim Spero of Cheeses from the Cave is back with her hand crafted, artisan cheese. Kim uses fresh, local products – milk, olive oil, and spices – embracing the climate and geography of the region. This makes these cheeses uniquely suitable to be paired with our amazing wines. Included in the pairing:
Caprie: (5 oz / $8.00) This goat’s milk cheese has been aged to just the right maturity. The light tang is a perfect match with the flavors in this wine. The cheese sits on a thin lemon cookie with a dollop of mango, grapefruit and basil salad. The bite is finished with a toss of saffron salt.
Paired with 2018 Call Me the Breeze (Sauvignon Blanc)
Raspberry Chevre: (5 oz / $8.00) A very young, fresh goat’s milk cheese, infused with homemade raspberry jam. The fruit in the cheese parallels the fruit tones in the wine. Placed on a cracked pepper water cracker and finished with espresso salt. The pepper brings out the lingering peppery notes of this lovely wine.
Paired with 2016 Lola (Zinfandel)
Fernbrook: (5 oz / $8.00) The Cave’s take on Jarlsberg, this cheese has the rich nutty tones common in the Swiss family of cheeses. Roasted tomatoes, pine nuts and fresh oregano are added to the flavor profile. A drizzle of rosemary olive oil brings depth to the bite.
Paired with 2017 Under My Thumb
Blue Gouda: (5 oz / $8.00) Deep and rich with a lovely pate, this cheese hits all the perfect blue flavors, pulling out the sweetness that lingers in this wine. We’ve doubled down on the dessert flavors with candied pecans, shortbread, and a drizzle of chocolate balsamic. A beautiful sweet bite to finish off the evening.
