Join us in the cellar for this popular event.  Kim Spero of Cheeses from the Cave joins us with her hand crafted, artisan cheese.  Kim uses fresh, local products – milk, olive oil, and spices – embracing the climate and geography of the region.  This makes these cheeses uniquely suitable to be paired with our amazing wines.  On the menu:

  • Strawberry Chevre paired with 2018 Big River Rose’ –  A fresh goat’s milk cheese. Homemade strawberry jam is gently swirled in the curds creating a delicious creamy sweet treat. Placed on a simple water cracker with a dollop of strawberry jam, the bite is finished with a toss of black salt. A simple balance to bring out the fruit and the depth in this lovely Rose.
  • Enmental paired with 2017 Good Thing (Malbec) – This is one of the most popular of Swiss-style cheeses. Rich and nutty, the dense texture of this cheese is a nice foil for the double cherry salsa that tops it. The bite is placed on a black pepper cracker and covered with grated rich dark chocolate.
  • Morbier paired with 2016 Lola (Zinfandel) – We love the versatility of this wine, so we’ve paired it with one of our favorite cheeses. Steeped in tradition, here the Morbier is nestled on a sesame melba toast with a light spread of black olive tapenade. Fresh tarragon leaves complete the flavor profile.
  • Dijaune paired with 2017 Simple Man (Estate Syrah) – Syrah is a favorite “food” wine. It’s big smoky flavors and depth make it a great accompaniment to many meals. Here, a a summer supper bite is recreated with this Asiago style cheese that has been infused with yellow mustard seeds. A toasted baguette slice holds the cheese, some homemade stone ground mustard, and a slice of prosciutto. Fried sage tops the bite bringing complexity to the pairing.
